The low fat low cholesterol diet recommended by mainstream medicine for over 6 decades, is causing the trauma and inflammation to the blood vessels that lead to heart disease and other chronic diseases. Read again! Such statement can raise a lot of eyebrows. Lundell blames the no-fat, low-fat diet recommended by mainstream medicine because this has spawned the mainstream American diet, the very foods now causing an epidemic of inflammation, unparalleled in history. The advise to avoid saturated fat in favor of foods high in supposedly healthier omega-6 fat was a terrible mistake, and has led to the widespread incidence of heart disease and other chronic illnesses.

So, what precisely are causing these chronic inflammation? The notorious culprits, according to Dr. Lundell, are the trademarks of the typical American diet - the overload of simple, highly processed carbohydrates like sugar and flour, and all food products derived from them; and too much intake of omega-6 vegetable oil like soybean, corn, and sunflower, which is a component of most processed foods, to give it longer shelf life.

Omega-6 fatty acids are essential for the normal functioning of the body. However, it has to be present in proper balance with omega-3 fatty acids. An imbalance in favor of omega-6 would make the cells trigger the production of cytokines, chemicals that directly induce inflammation. The current American diet produces an imbalance of 15:1 up to 30:1 in favor of omega-6, when the optimal and healthy ratio should only be 3:1. Wow...that's a lot of inflammation generating cytokines!
